Lunch: pan fried salmon fillet on chard, with spring onions, quinoa and puy lentils, sprinkled with Furikake seasoning and tamari.
Starter for supper last night. Little brown shrimps, Tångkorn (seaweed ‘roe’) and sour cream. With akvavit of course.
Lunch today: leftover roasted vegetables with Waitrose’s quinoa and puy lentils, loads of chopped parsley and a dash of balsamic vinegar.
The last of the chanterelles my sister brought back for me from Sweden were tucked into this omelette. And they were delicious!
Afternoon snack - fresh fig and goats cheese with a dribble of local honey.
Scrambled eggs and smoked salmon for breakfast today. Pure nourishment.
Ever so quick supper: pan fried salmon fillet and cherry tomatoes, when just cooked through an extra knob of butter added to pan, plus some chopped parsley and capers, and then lemon juice squeezed over. The salmon and tomatoes served on a pile of lambs lettuce and the buttery, lemony capery mixture scraped from the pan and poured over.
Family here to lunch and gave them very local hand reared pork, salsa verde and roar vegetables.
